It’s Taco Tuesday!
Everyone loves taco Tuesdays. Growing up my siblings and I were picky eaters, but we loved moms food more than any restaurant out there, when she made tacos she had to came up with her own versions of a traditional Mexican taco recipe, something healthier, not spicy, and only with ingredients we liked. We all agree Mexican food is really good but can be a little heavy and not healthy for you. Some restaurants here in SoCal offer the “skinny way” (lettuce wrap instead of corn/flour tortilla) which is great!
Tonight I decided to make one of the many versions of Skinny Tacos out there. These tacos are one of my favorites, they are easy to make, they are delicious, guilt free, gluten free, wheat free, and you can add as many ingredients as you wish! I like to make them different ways Paleo friendly, Vegan or raw vegan. There is nothing like a good homemade taco! Que rico!
Tacos are quite common at our house they are great for parties too, you can make them with homemade tortillas or like my recipe with Butter lettuce leaves or romaine so your guests decide what they want to use as their shell. Put all the toppings on separate plates and they will have a lot of fun creating their own version of taco.
This time I chose to make them Paleo using Organic chicken, but you can add turkey, beef or fish. You can also make them Vegan or Raw which I also love ( more recipes coming soon)
Ok, just thinking about its making me hungry, so are you ready amigos?
INGREDIENTS: (Makes 2 servings)
2 boneless skinless organic chicken breasts (choose organic when possible, hormone free, no antibiotics, free range, cage free, etc.)
2 to 3 tomatos finely chopped
1 finely chopped onion
1/4 teaspoon Freshly ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cumin
1/4 teaspoon paprika
Pink Himalayan salt (or any of your choice), to taste
Cayenne pepper, to taste (optional)
1/2 cup of cashews or almonds
1 to 2 avocados
Salt, to taste
For the shell:
Butter Lettuce leaves or romaine lettuce (you can chose a healthy version of tortilla)
Preheat the oven, the secret to juicy chicken breasts is to bake them for a short time at a high temperature. Baking for 30 minutes at 400 degrees F. Or baking it for just 20 minutes at 450 degrees F both will result in amazingly juicy chicken breasts, every time. Line a baking dish with foil and spray it with olive oil nonstick spray, or oil of choice.
In a bowl add seasonings and marinate the chicken place it on the foil and Bake.
When done transfer the chicken to a platter. Allow it to rest 5 minutes before slicing into about 1-inch cubes or into strips.
And you are ready to create you own skinny taco my friend!
Place chicken onto a lettuce leaf, add toppings like tomatoes, lettuce, guacamole or sliced avocado, cashews or almonds and squeeze lime on top! enjoy!
Note: I love to add Salsa Picante for a little kick!
